Cutting edge remains sharper longer than a conventional steel blade
Ceramic blade will not react with food
The ultra-sharp peeler blade made of zirconium oxide ceramic, which retains its sharpness longer than steel and does not react with food. The cutting blade is on one side so there are two configurations for left and right handed chefs.
The handle is Redheart which has a food safe finish and mineral coating. You should reapply oil every couple of months to keep it protected. I do not use any harsh finished since it will be used around food.
